RESEARCH
The food industry is constantly facing food fraud challenges that threaten the integrity of the food supply chain.
This research investigates the use of digital technologies to identify and mitigate fraud within the food supply chain. Present approaches have detected food fraud in controlled environments using laborious, destructive or cost-inefficient techniques.
However, this study focuses on improving the integrity of food supply chains by applying IoT and data analytics techniques in a field-based environment, thereby bridging the gap between lab-based research and practical industry-based applications.
